What has changed?

From time to time, I am asked why food safety hazards seem more prevalent now than they were two, three or more decades ago.

Why are more types of food at risk?

Where were Norovirus, Listeria monocytogenes, and other foodborne pathogens back then?

Why were we able to sample raw cake batter and raw cookie dough when we were kids without our parents worrying about Salmonella?

Much has changed in food production, processing and distribution in the last fifty years.

When I was growing up (in the 50s and 60s), most food to be found in grocery stores was still sourced locally. Produce was seasonal; we never saw fresh blueberries and strawberries in the our local grocery store in mid-winter.

The coming of large-scale food production and distribution was the harbinger of significant change to the way produce was harvested and the way food animals were raised.

Back then, large cattle feedlots for ‘finishing’ beef were the exception rather than the rule. My mother bought her meat and poultry from a neighborhood butcher shop and her bread from a local bakery. In short, if a food was contaminated, the extent of the potential outbreak was limited to the local market reach.

Amassing cattle in large feedlots under crowded conditions enhanced the potential spread of infections, resulting in the need to introduce antibiotics into the feed. At the low levels used, these antibiotics promoted ‘growth’ (ie., cattle fattened more quickly); however, they also promoted the development of antibiotic-resistant strains of bacteria.

The accumulated excrement from the cattle contaminated groundwater in the vicinity of the feedlots, increasing the spread of bacteria such as Salmonella and E. coli into the environment, including the wild animal populations.

Where fields were being farmed in the vicinity of feedlots, there was an increased potential for irrigation water (or run-off from rains) to spread the bacteria to the growing crops.

In the 50s and 60s, there was no effective method to detect Norovirus. Illnesses that today are attributed to Norovirus infections were written off as ‘stomach flu’ instead.

Some of the bacterial pathogens common today (notably, shiga-toxin producing E. coli, including E. coli O157:H7) are relatively recent mutations. The earliest report in the literature of an E. coli O157:H7 outbreak dates from 1983.

Large-scale production requires large-scale distribution networks, including transportation of liquid ingredients in tanker trucks. A Salmonella outbreak resulted from the transportation of pasteurized ice cream mix in a tanker that had previously carried liquid raw egg, and that hadn’t been sanitized between uses.

Climate change also has played a role. For example, shellfish are known to harbor Vibrio parahaemolyticus. However, this pathogen is cold-sensitive and was not a food safety hazard in the waters off the coast off Canada’s west coast in the past. With the rise in water temperatures, Vibrio parahaemolyticus has been found more frequently in shellfish harvested in those waters.

In 2007, ASM Press published my book, Food Safety: Old Habits, New Perspectives. Although now more than eleven years old, much of its content is still current.

As technology changes, so must the old habits we grew up with. By relying on yesterday’s food preparation methods, we lay ourselves open to tomorrow’s health threats.

The recalled products were distributed to retailers in Ontario.

Allergy Alert: Numage Québec Inc. recalls Verona Giant Lady Fingers (150g; All codes where milk does not appear on the ingredient list; UPC 0 66624 20087 5) due to undeclared milk. The recalled product was distributed to retailers in Alberta, Ontario, and Quebec.

Allergy Alert: Too Corny Gourmet Popcorn recalls Too Corny Salt & Vinegar Flavoured Gourmet Popcorn (25g & 55g; all lots where milk is not declared; UPC 6 86773 00040 1) due to undeclared milk. The recalled product was distributed to consumers in Alberta.

Allergy Alert: Mondelez Canada Inc. recalls Véa World Recipes Seed Cracker Mexican Garden Herbs Flavour (141g; Product code 2018JA27; UPC 0 66721 00769 8) due to undeclared sesame. The recalled product was distributed to retailers nationwide.

Allergy Alert: Campbell Soup Company recalls Wolfgang Puck Creamy Butternut Squash Organic Soup (398 mL; all codes where mustard is not declared; UPC 8 58328 76448 3) due to undeclared mustard. The recalled product was distributed to retailers in British Columbia, Ontario, and possibly nationally.

Food Safety Recall/Outbreak Alert: Sofina Foods Inc. recalls Janes Pub Style Chicken Burgers – Uncooked Breaded Chicken Burgers (800g; Product code 2018 MA 12; UPC 0 69299 12491 0) and Janes Pub Style Snacks Popcorn Chicken – Uncooked Breaded Chicken Cutlettes (800g; Product code 2018 MA 15; UPC 0 69299 12542 9) due to Salmonella contamination. The recalled product was linked to 13 cases of salmonellosis in Ontario (7), Quebec (2), New Brunswick (2), and Nova Scotia (2), and was distributed to retailers nationwide.

Food Safety Recall: Vantage Foods (ON) Inc. recalls Food Basics Mechanically Tenderized Hip Steak (Best Before 2017OC17; UPC starts with 0 211030) and Food Basics Mechanically Tenderized Steak FP (Best before Best Before 2017OC17; UPC starts with 0 224015) due to possible E. coli O157:H7 contamination. The recalled product was distributed to retailers in Ontario.

Food Safety Recall: Sultan of Samosas Inc. recalls various samosas (8kg; All codes produced between August 21, 2017 and August 31, 2017) due to contamination with pieces of metal. Food Safety Recall: Yummy Market Inc. recalls Yummy Market Smoked Lake Trout w/Pepper with Cracked Black Pepper (Best Before 2017 OCT 25 and 2017 NOV 01) because it may permit the growth of Clostridium botulinum.

Food Safety Recall: Industry is recalling certain farm-raised Pacific Oysters due to the presence of the marine biotoxin that causes Paralytic Shellfish Poisoning. Food Recall: Phoenicia Group Inc. recalls Daïa Deglet Nour Dates (200g; Best before 30/09/2018; Lot LNR126PC/16; UPC 0 62356 54465 2) due to insect infestation. The recalled product was distributed to retailers in Manitoba, Ontario and Quebec.

Allergy Alert: Custom Culinary, Inc. recalls Molly’s Kitchen Soup Base Paste Beef Base Paste – NO MSG Added ( 6-lb. corrugate case; lot code of 72505 239497 or 72505 239498) and Molly’s Kitchen Chicken Base Paste / 301817 / No MSG Added (1-lb. white plastic jars; lot code of 72505 239497 or 72505 239498) due to undeclared soy and the possibility of mislabeled jars (jars labeled as chicken may contain beef). The recalled products were shipped to food service distributors nationwide.

Allergy Alert: Sunneen Health Foods recalls Whole Foods Market PB&J parfaits (8-oz. containers; All Best by dates before 7/13/2017; UPC 636910500448) due to undeclared soy, almonds and coconut. The recalled products were sold at five Whole Foods Market stores in New York and New Jersey.

Allergy Alert: Coborn’s, Inc. recalls Gluten Free Fudge Brownies (Expiration July 10, 2017; UPC 7-33147-20522-8), as some of the packages may contain Gluten Free Chocolate Chip Bars and, consequently, contain undeclared milk. The recalled products were distributed and sold at Coborn’s and Cash Wise stores in Minnesota, North Dakota and South Dakota, as well as Marketplace Foods stores in Wisconsin, and Coborn’s Delivers in the Twin Cities Metro area.

Allergy Alert: Biohealth Nutrition recalls Precision Blend Cookies & Cream (2-lb and 4-lb white plastic canisters; all lot codes) due to undeclared wheat.

Food Safety Recall: Marathon Enterprises Inc. recalls Hot Dog Products due to potential contamination with bone fragments. Please refer to the recall notice for a complete list of affected products, which were shipped to retail and institutional locations nationwide.

Food Safety Recall: M&L Farms, LLC recalls approximately 383 beef, goat, and lamb carcasses with offal that were produced with a non- potable water supply that failed to meet the Ohio Department of Health’s requirements in the Ohio Administrative Code for a private water system. Food Safety Recall: Sol Andino Import & Export recalls Ground Comin/Ground Cumin (2-oz clear plastic bag; UPC 884752003812) due to lead contamination.
